What Ales Ya Cupcakes! (Strawberry flavor!)

What Ales Ya Cupcakes!
1lb washed quatered large strawberries. (you really only need about 6 juicy large strawberries)
2 1/2 cups flour
3/4 tsp baking soda
1/2 tsp salt

1 1/2 sticks REAL butter
3/4 sugar
3/4 light brown sugar
2 large eggs

3/4 cup (6oz) Redd's Strawberry Ale
2 Tbls Lemoncello (or lemon juice) (2 shots of Lemoncello is more then enough. 100ml or 4 oz)
2 tsp vanilla extract

-Preheat the oven to 350 degrees F.
• In a large bowl, sift together flour, baking soda, salt. Set aside.
• In a large bowl, using an electric mixer, cream the butter and sugars together. Add the eggs, beating well after each addition.
-Add the beer, lemoncello (or lemon juice), vanilla and beat until combined.
-Add the dry ingredients gradually and mix thoroughly.

-take your 6 large strawberries and half or quarter them. Depending on their size. You'll place one piece in each cup and pour batter to cover each one. You'll have leftover strawberries of course! What a great treat to enjoy while you wait for the cupcakes to bake!

-. Use cupcake papers! Bake for 20-30 minutes, or until a toothpick inserted in the center comes out clean. Or the cake has a little "bounce" when you light press your finger on! It depends upon your oven and what colored pan you are using.
Allow to cool.

While the little tasty cakes are baking. Pull together a super easy glaze. 1/2-1 cup of Confectioner's Sugar....also known as Powdered sugar.  1 Tablespoon Lemoncello (or lemon juice). Start off with the 1/2 cup of powdered sugar and tablespoon of Lemoncello. Adjust the ingredients until you have the consistency you are happy with. Making a glaze is really easy. You want it a touch more watery then an icing. but not overly so. Play around with it and see what you think!

After the cupcakes are cooled down pour a generous amount of the glaze over each cake before serving it. The cake will soak it right up! So if you are taking it anywhere wait until you arrive to pour it over. It still tastes delicious even after having the glaze on it overnight! So don't stress to much about it!

Happy Baking!

Simple Halloween Treat

Super easy and fun to do! You can even let the kiddos help!

Aldi's had some super cute Halloween marshmallows for $1! Me being a sugar fiend of course I bought some! The pumpkin shape marshmallows actually taste like pumpkin! Yum!!!!!

Simple ingredients!
Bread
Butter
Sprinkles
Marshmellows
Cinnamon and sugar
Cheese

Grab a pan.
Fill it with bread.
Butter each piece except for the ones you want cheese on.
Put a slice of cheese on the non-buttered slices.
On the buttered slices. ...
Sprinkles on some.
Marshmellows on others.
Some cinnamon and sugar on one or two.
Turn your oven on to 350 degrees. No preheating needed.
Slide your pan right on in.
When the oven dings that it is preheated your toast is done!
Just keep an eye on it just in case though! Your oven may be different from mine!

This is great for the kids to munch on while you make breakfast for the rest of the family!

Happy cooking!
