Two Cakes for Two different tastes! Valentines Day Ideas! (Plum Wine and Cinnamon Whiskey)

It's true people. Valentine's day is much closer then it appears! It is right around the corner! Guys if you are thinking of doing something special for that special someone...then you should begin planning about it now. Same goes for you girls too!!! Valentine's day is not just to receive presents. But, a chance for you to express your feelings for that special someone!

-chuckles-

My husband prefers to give me gifts then to receive them. Super sweet, but no fun! I always found it funny when I would get him something and then he would give me this exasperated look! Of course I would just smile sweetly at him! So then I told him that on any holiday I could get him whatever I wanted and he couldn't say a word to me about it! Muhahahaha! And still to this day, 7 years later, I still get my way!

Anyone can buy a box of chocolate. It's a lot of fun to get one, but sometimes you are looking for that special something. So my dears, I have put together two different cake recipes as well as a drink to compliment each one. Yay!

For plum wine lovers everywhere, rejoice! This cake compliments plum wine just perfectly! Not overly sweet, but the flavor of the wine carries throughout this moist cake perfectly!

Plum Wine Cake

2 1/4 cups Flour
1 2/3 cup Sugar
3 1/2 tsp Baking Powder
1 tsp salt
1 1/4 cup Plum Wine
2/3 cup Real Butter
1 tsp Vanilla Extract
1 tsp Almond Extract
5 Egg Whites

Preheat oven to 350.
Cream Butter and Sugar.
Sift Dry ingredients then slowly add it to the butter and sugar mixture.
Add the Plum Wine and Extracts.
Slowly add the egg whites one at a time blending it well as you do so.
Continue to mix for a few more minutes. Be sure to scrap the bottom and the sides of the bowl to make sure everything is mixing smoothly and not building up on the bottom of the bowl.

In a muffin pan line the cups with muffin liners and fill halfway full with batter.
Bake for 15-20 minutes.
It could take a little longer. At the 15 minute mark use a toothpick to test the cakes. If it comes out clean they are done. If not cook for another 5 minutes until finished!

No icing is needed for this cake. Sprinkle with a little bit of powder sugar using the sifter.
There you go beautiful simple cakes that have such a light mouth watering taste!
Serve while still warm if possible with a glass of ice cold Plum wine.
You can always warm them up in the microwave for about 30 seconds as well!

Spiked Apple Cake
3 Apples chopped into small chunks
1 cup chopped walnuts (optional)
2 1/2 cups flour
3/4 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1 1/2 sticks REAL butter
3/4 sugar
3/4 light brown sugar
2 large eggs
3/4 cup (6oz) Cinnamon Whiskey
2 tsp vanilla extract
1 tsp almond extract

-Preheat the oven to 350 degrees F. Spray a 12-cup Bundt pan with cooking spray and set aside.
(I prefer to butter and flour my pan)
• In a large bowl, sift together flour, baking soda, salt, cinnamon, nutmeg, allspice. Set aside.
• In a large bowl, using an electric mixer, cream the butter and sugars together. Add the eggs, beating well after each addition. Make sure to scrap the bowl so the creamed mixture doesn't stick to the bottom of the bowl.
-Add the Cinnamon Whiskey, almond and vanilla extract and beat until combined.
-Add the dry ingredients gradually and mix thoroughly.
-Add the apples last and give it a final thorough mixing!
• Pour batter into the prepared pan. Bake for 45 to 50 minutes, or until a tester inserted in the center comes out clean. Cool cake in pan on wire rack for 20 minutes. Invert onto a cake plate. Cool thoroughly.

This cake will easily fall apart into bite size pieces. It is so moist and full of flavor!
Perfect drink to go with this cake:

1 part Cinnamon Whiskey
1 part Cranberry Juice
On the rocks

Cinnamon Whiskey at room temperature or on the rocks!

Hot Apple Cider with a splash of Cinnamon Whiskey.

Now that you have some delicious ideas for something special, here a few other ideas to help you guys out!

-Instead of going to a nice restaurant try packing a picnic and going somewhere beautiful and peaceful for a sweet date.
-Candle light dinner at the house with a delicious homemade meal...or food picked up from your favorite restaurant!
-Picnic in the living room with a roaring fire! (Netflix has a fireplace series as well...all it is, is a fireplace!)

This day goes both way my dears for gifts. Just remember it's the thought that counts in the end. Anyone can buy something out of the store. But to have something that was put together with love, just for you....you can't buy that no matter how much money you spend.

So take a deep breath and just enjoy each other's company. Not exchanging gifts or doing anything is GREAT to!!! I love just getting a sweet kiss from my hubby in the morning and going on with our day. Know he loves me is enough for me. Good luck to you all!
