These were actually my very first attempt with making truffles. So I decided to try it again and this time actually measure how much extract I put in them! I'm one of those people that I just enjoy dumping things together without measuring. Not so good for recipe writing, but amazing for the taste buds!
1 12oz bag White Chocolate Chips
1/3 cup Heavy Whipping Cream
3 tsp Peppermint Extract
1 12oz Bag Dark Chocolate Chips
Using a double boiler melt the White chocolate chips and heavy whipping cream together.
Remove from heat and then add the peppermint extract.
Mix completely to evenly spread out the flavor!
Pour into a flat dish and place in the refrigerator until the chocolate is stiff yet moldable.
Begin Melting the dark chocolate over the double boiler.
As the Dark chocolate melts begin making balls out of the white chocolate.
Using a small bowl place a small amount of dark chocolate in the center.
Using a spoon roll the white chocolate ball in the dark chocolate coating it completely.
Place the dark chocolate covered ball on a wax paper covered plate.
Allow to cool and harden completely. Try placing them in the fridge or freezer to speed the process!
